We generally add the broccoli florets and throw the stem little realising how nutritious and delicious the stem is.I can’t even tell you how many years I spent throwing my broccoli stems in the garbage and i hate myself for that now :P. I always used to wonder how to use them before throwing them away till recently i discovered a few ways . So here i am sharing the recipe of a clear broccoli stem soup,quick and easy to make.
- 1 tbsp olive oil
- 2 small onions, sliced
- Corn starch
- 2 cloves of garlic, chopped up
- The stems from one head of broccoli, sliced
- Salt and pepper to taste
The Broccoli stem will have those sharp edges remove those.So that it looks like this(the picture below).Chop into small pieces put into a container(microwave safe) with water and microwave it for 4-5mins so that it becomes a bit soft.
Now Add one cup of water and add 1 table spoon of corn starch to it and salt to taste.
When the soup turns thick,let it cool for sometime and then blend it with a blender.
Add pepper and salt to taste.Add some almonds for that extra zing(gives a nice after taste) and serve the soup hot.
